PURPOSE: Pizza crust prepared by using wheat flour, rice flour and glutinous rice flour is provided which has a little sticky or tough structure and good taste. CONSTITUTION: Pizza crust is prepared by adding water to feedstock materials containing 2.8kg glutinous rice flour, 0.9kg rice flour and 2.3kg wheat flour and yeast to give a dough; fermenting the dough for 1.5 to 2 hr; molding it into a sheet having a size of 5x7cm; fermenting at 15 to 20deg.C for 10 to 20 min; and baking at 80 to 200deg.C for 4 to 5 min in an oven.
