PROBLEM TO BE SOLVED: To provide a mustard seed capable of suppressing manifestation of pungency and bitterness, and achieving abundant repast and to provide a mustard.SOLUTION: There are provided a mustard seed capable of suppressing manifestation of pungency and bitterness, and a mustard prepared by milling the seed, by applying a physical chemical treatment to a seed (hereafter referred to as a mustard seed) of Brassica juncea or the like which is a raw material of a mustard.
