Disclosed is an animal muscle tissue protein composition for use during a food processing injection procedure with at least one injection pathway wherein the suspension comprises sarcoplasmic proteins and myofibrillar proteins derived from animal muscle tissue and obtained by the process comprising: Comminuting (breaking down, grinding, pulverising or reducing to particles or fragments) animal muscle tissue Mixing said comminuted animal muscle protein tissue with a food grade acid composition to form an aqueous acidic solution of animal muscle protein having a pH between about 2.0 and about 3.7. mixing said aqueous acidic solution of animal muscle protein with a food grade alkaline composition to form an aqueous composition of animal muscle protein having a pH between about 4.7 and about 11.0, additing salt to the aqueous suspension to form a salted aqueous suspension of animal muscle protein, and comminuting said aqueous composition of animal muscle thereby to form an aqueous suspension of animal muscle protein, wherein the suspension flows through and injection pathway without blocking.
