PROBLEM TO BE SOLVED: To provide compost with high quality for vegetable production.SOLUTION: Provided are: a method for producing compost, comprising a step of fermentation treating organic waste from plants by using bacillus subtilis C-3102 strain (FERM BP-1096) or a variant bacterium thereof, more specifically a step of fermentation treatment of the same including first fermentation which performs intermittently agitated fermentation and second fermentation which performs aerated fermentation, thereby composting the organic waste at a reduction rate of 95% or more； the compost； and methods for producing vegetables using the compost.【課題】野菜生産のための良質の堆肥を提供する。【解決手段】植物由来の有機性廃棄物をバチルス・ズブチルスＣ－３１０２株（ＦＥＲＭ ＢＰ－１０９６）もしくはその変異株の微生物を用いて、発酵処理によって、具体的には、間欠撹拌発酵する一次発酵と通気発酵を行う二次発酵とを含む発酵処理によって、該有機性廃棄物を９５％以上の原料率で堆肥化することを含む、堆肥の製造方法、堆肥、ならびに、野菜の生産方法。【選択図】なし
