FIELD: food industry.SUBSTANCE: invention relates to fat-and-oil industry. The oil contains: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds； at least one first antioxidant； and less than about 1.000 ppm of lecithin, wherein at least the first antioxidant is tocopherol in the amount of 900-3400 ppm. In the second embodiment, the oil comprises: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds； at least one first antioxidant； less than about 750 ppm of the second antioxidant selected from ascorbic acid derivatives, wherein at least the first antioxidant is tocopherol in the amount of 900-3.400 ppm. In the third embodiment, the oil comprises: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds； at least one first antioxidant； less than about 30 ppm of iron, wherein at least the first antioxidant is tocopherol in the amount of 900-3400 ppm. According to the fourth embodiment, the oil comprises: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds； at least one first antioxidant； means for enhanced oxidative stability, wherein the said oil has a fishy odor weaker than 1.5； wherein at least the first antioxidant is tocopherol in the amount of 900-3400 ppm.
