FIELD: food industry.SUBSTANCE: invention relates to fat-and-oil industry. The oil contains: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds; at least one first antioxidant; and less than about 1.000 ppm of lecithin, wherein at least the first antioxidant is tocopherol in the amount of 900-3400 ppm. In the second embodiment, the oil comprises: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds; at least one first antioxidant; less than about 750 ppm of the second antioxidant selected from ascorbic acid derivatives, wherein at least the first antioxidant is tocopherol in the amount of 900-3.400 ppm. In the third embodiment, the oil comprises: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds; at least one first antioxidant; less than about 30 ppm of iron, wherein at least the first antioxidant is tocopherol in the amount of 900-3400 ppm. According to the fourth embodiment, the oil comprises: at least 30 wt % of one or more polyunsaturated fatty acids, which contain at least 4 double bonds; at least one first antioxidant; means for enhanced oxidative stability, wherein the said oil has a fishy odor weaker than 1.5; wherein at least the first antioxidant is tocopherol in the amount of 900-3400 ppm.
