The present invention relates generally to the modification of molecules, in particular of proteins and nucleic acids, called glycation, which results in formation of advanced glycation endproducts and protein or nucleic acid crosslinks. The present invention provides products, and more particularly enzymes, that are useful for preventing or reversing protein and nucleic acid glycation. The invention in particular relates to an in vitro method for preventing and/or reversing glycation of a molecule of interest, said method comprising the step of bringing together the molecule of interest and a DJ-1 protein and/or one of its homologs.La présente invention concerne dune manière générale la modification de molécules, en particulier de protéines et dacides nucléiques, appelée glycation, qui entraîne la formation de produits terminaux de glycation avancée et de réticulations de protéines ou dacide nucléiques. La présente invention concerne des produits, et plus particulièrement des enzymes, utiles pour prévenir ou inverser la glycation de protéines et dacides nucléiques. Linvention concerne en particulier un procédé in vitro pour la prévention et/ou linversion de la glycation dune molécule dintérêt, ledit procédé comprenant létape consistant à mettre en contact la molécule dintérêt et une protéine DJ-1 et/ou lun de ses homologues.
