The invention relates to the celery extracts having the antioxidant and vascular protective effect. The extracts from the stems and leaves of selected celeries, including Leaf celery (Apium graveolens variety secalinum), Honewort (Cryptotaenia Canadensis), and Celeriac (Apium graveolens var. rapaceum), commonly available in the market, are used for the experiments of antioxidation and vascular protection. The results show that the leaves of all three kinds of celeries contain the antioxidant and vascular protective effect. Among them, the Leaf celery has the best result, especially when the extracts of fresh leaf juice and the median concentration level 50-70% of ethanol extracts are used. Comparison of the effect from using different parts of the Leaf celery indicates that the antioxidant and vascular protective effect from using the stems is less than that from using the leaves.
