To enable manufacturing a boiled brown rice in a sealed pack excellent in taste, high in a nutrition value, capable of storing for a long period of time, and serving as food directly without cooking.SOLUTION: The method of manufacturing a boiled brown rice in a sealed pack includes the steps of: putting a brown rice, water necessary for boiling the brown rice, and air necessary for acting decomposition reaction to an enzyme contained in the brown rice into a pack； sealing the pack so as not to discharge the content； standing still the pack after sealing under a germination environment set as a temperature and a treatment time fit in a germination condition of the brown rice； taking out the pack from the germination environment according to an estimated time right before germination of the brown rice which is preliminarily found； transferring the pack after taking out from the germination environment to a heating environment satisfying a deactivation condition of the enzyme contained in the brown rice and a sterilization condition of bacteria； and taking out the pack from the heating environment by a timing of boiling the brown rice up in the pack and exceeding a F value of 4.SELECTED DRAWING: Figure 1
