Methods of and compositions for producing and using plant-based materials areprovided. The methods include usingbiopolymers or their synthetic equivalents combined with a stable source ofreactive oxygen species that when applied to orcombined with a separate source of oxido-reducing enzyme or catalyst willcause the formation of an activated biopolymer withincreased protein binding affinity and microbial control activities.
