The transport direction runs in a longitudinal direction of the peeling item. The blades have blade levers (7,7') extending in a longitudinal direction of the blades and blade knives pivoted relative to the blade levers. The blades are pivoted at a carrier (3) by a joint. The blade levers are oriented in the base position and are displaced parallely from each other in the peeling position.
