According to the present invention, the method for manufacturing cheonggukjang by using a bacillus subtilis SCM 685 strain having antibacterial activity and biogenic amine decomposition activity against harmful microorganisms of sauce comprises a step of fermenting steamed soybeans by inoculating the steamed soybeans with the bacillus subtilis SCM 685 strain having antibacterial activity and biogenic amine decomposition activity against harmful microorganisms of sauce.
