The invention relates to the food industry. A method for processing sunflower or rapeseed meal includes, according to a first variant, extracting protein and carbohydrates from the meal by means of introducing an aqueous alkali solution having a pH of 8.5-9.5 into a suspension prepared from a mixture of meal and water in a ratio of 1:5-10, and keeping the suspension at 45-55°С for a period of 45-60 minutes. The suspension is fed to a decanter, producing an extract and a solid phase (cake, low protein fiber) to be subsequently dried and granulated. The extract is purified, producing purified extract and a solid state (sludge) to be subsequently dried and granulated. Protein is extracted by means of ultrafiltration, concentrated by means of evaporation at low temperatures, and subsequently dried, producing a concentrate of sunflower or rapeseed protein. Carbohydrates which have passed through the ultrafiltration apparatus are extracted using a reverse osmosis filtration apparatus, forming a saccharide solution and concentrating the carbohydrates to produce saccharide syrup. The method according to a second variant is characterized in that the extract produced after the first decanter is mixed with water and fed to a second decanter, forming a solid phase and an extract. Then the extract produced by means of mixing the extracts after the first and second decanters is purified, producing a solid phase (sludge) and purified extract.
