Described herein is an apparatus for refining cocoa, of the type comprising:- a disk (2) rotating about an axis of rotation (I), which is provided, on both of its opposite sides, with a plurality of teeth； and- a pair of fixed plates (4, 6) opposed to one another, positioned between which is said rotating disk (2), each plate facing a corresponding side of said disk (2) and being provided with a plurality of teeth configured for co-operating with the plurality of teeth of said corresponding side of said rotating disk.The apparatus described is prearranged for enabling a refining treatment that is much faster as compared to machines of the prior art.
