The present invention provides a method for producing fermented ginseng preserved in an original form, comprising the steps of: applying microorganisms or enzymes to a needle and inoculating the inside of fresh ginseng by impregnation or injection with a syringe； impregnating or inoculating fresh ginseng with microorganisms or enzymes, and then drying an outer surface of the fresh ginseng by cold air； fermenting fresh ginseng by the impregnated or inoculated microorganisms or enzymes to obtain fermented ginseng； and lyophilizing the fermented ginseng to maintain an original form of the obtained fermented ginseng.본 발명은 니들에 미생물 또는 효소를 도포하여 생삼의 내부에 함침 또는 주사기로 주입하여 접종하는 단계； 생삼에 미생물 또는 효소를 함침 또는 접종한 후 냉풍 건조하여 생삼의 겉 표면만 건조하는 단계； 생삼을 상기 함침 또는 접종된 미생물 또는 효소에 의해 발효하여 발효삼을 얻는 단계； 및 상기 얻어진 발효삼의 원형 형태를 유지하기 위해 동결건조하는 단계를 포함하는 원형이 보존된 발효삼의 제조방법을 제공한다.
