Disclosed is a pressurization salting equipment capable of adjusting pressure. The pressurization salting equipment capable of adjusting pressure according to one embodiment of the present invention comprises: a salting tank which accommodates a large amount of vegetable and salt water but provides space for cutting vegetables； a brine supply unit connected to the salting tank and supplying brine to the salting tank； and a pressurizing unit which is provided to go up and down in the height direction on the upper part of the salting tank and continuously pressurizes vegetables so as to be immersed in the brine contained in the salting tank and adjusts the pressurizing pressure to press the vegetables depending on set conditions.압력 조절이 가능한 가압 절임장치가 개시된다. 본 발명의 일 실시예에 따른 압력 조절이 가능한 가압 절임장치는 다량의 채소와 염수를 수용하되, 채소를 절이는 공간을 제공하는 절임조； 절임조에 연결되어 절임조에 염수를 공급하는 염수 공급유닛； 및 절임조의 상부에 높이방향으로 승강되게 마련되되, 채소를 절임조에 수용된 염수에 침지되게 지속적으로 가압하며, 설정조건에 따라 채소를 가압하는 가압압력을 조절하는 가압유닛을 포함한다.
