PROBLEM TO BE SOLVED: To provide a method for producing flavones from buckwheat sprout in high yield.
SOLUTION: The method for producing flavones from buckwheat sprouts comprises irradiating growing buckwheat sprouts with ultraviolet, collecting the leaves of the sprouts, and extracting the leaves with organic solvent followed by treating the thus extracted substance with organic acid to obtain flavones in high yield.
