PURPOSE:To provide the subject medium containing canavanine, arginine and ornithine and capable of efficiently growing an arginase gene-deficient strain of yeast useful for the brewing of safe liquor free from carcinogenic ethyl carbamate. CONSTITUTION:The objective medium contains canavanine, arginine and ornithine. The contents of canavanine, arginine and ornithine are preferably 0.1-20ppm, 0.05-50mM and 0.25-250mM, respectively. The medium is preferably compounded further with yeast nitrogen base and a sugar in addition to the above components.
