PROBLEM TO BE SOLVED: To perform the first treatment at a lower temperature for evaporating seawater by means of a water evaporation phenomenon under a reduced atmospheric pressure so as to eliminate the conventional need for thermal energy, and to perform the second treatment for transforming water vapor into fresh water by means of dew condensation while dispensing with a refrigeration step for dew condensation, in an evaporation method, which is a dehydration method capable of being used for desalination of seawater and desalination of water contained in vegetables and fruits, and capable of recovering concentrates.SOLUTION: To prevent air from being saturated with water vapor, in the first treatment, a large volume of high-speed air is caused to flow against a wing, which is an aircraft wing installed upside down, to reduce the atmospheric pressure of the side in contact with a water-containing substance, thereby evaporating water from the water-containing substance to generate unsaturated humid air which is a mixture of this water vapor and air. In the second treatment, the atmospheric pressure in a condensation chamber is increased to saturate the unsaturated humid air, thereby condensing the water vapor on a dew condensation plate which is surface-modified so as to be hydrophilic and recovering distilled water.【課題】海水の淡水化にも、野菜や果実に含有している水分の淡水化にも使え、かつ濃縮物の回収もできる脱水法は蒸発法である。雰囲気の気圧を下げ、水蒸気蒸発が起こる現象を利用して海水を蒸発させることが第1処理であり、水蒸気を真水に還元することが第2処理である。この第1処理を低温化で行い、従来の熱エネルギーの必要性を無くし、第2処理では結露のために冷凍行程を無くすことが、本発明が解決しようとする課題である。【解決手段】空気中の水蒸気を飽和に達しさせないために、第1処理では、航空機の翼の上下を逆に取り付けた翼に高速空気を大量に流し、含水物に接する面の雰囲気気圧を下げ、含水物からの水分を蒸発させ、この水蒸気と空気とが混合した不飽和湿り空気を発生させる。そして、第2処理では凝縮室の気圧を上げ、不飽和湿り空気を飽和させ、親水性に表面改質した結露板に水蒸気を凝縮させて蒸留水を回収する。【選択図】 図2
