The compositions and methods comprise genetically encoding and expressing a novel delta-9 desaturase in plant cells. In some embodiments, a method of expressing a nucleic acid in a plant cell to exploit the activity of a delta-9 desaturase enzyme, thereby reducing the composition percentage of saturated fatty acids in plant seeds and concomitantly increasing 9 fatty acids. In another embodiment, the amino acid sequence has a delta-9 desaturase activity.
