PROBLEM TO BE SOLVED: To provide a freezing/thawing method for making squids transparent even after thawing by solving the problems that conventionally, when squids just after being killed in a fish tank are frozen and thawed, transparency is greatly damaged to cause nearly cloudiness.SOLUTION: Squids transparent before freezing are obtained by: removing internal organs, tentacles and heads of squids just after being killed in a fish tank vertically putting a knife into the trunk to make one sheet followed by soaking in a freezing liquid bringing both surfaces into contact with dry ice to freeze followed by preserving in a vacuum pack and soaking the product in a normal temperature thawing liquid as a thawing liquid of a concentration near the osmotic pressure of squid body fluid, having pH about 7.3, containing trehalase, and having mol number 2 of potassium ion to mol number 1 of sodium ion, and thawing the product.COPYRIGHT: (C)2015,JPO&INPIT【課題】従来、活け締め直後のヤリイカを冷凍して解凍すると透明度が大きく損なわれ、ほとんど白濁してしまっていたが解凍後もヤリイカが透明であるような冷凍・解凍法が求められている。【解決手段】活け締め直後のヤリイカの内臓と足と頭部を除いて、胴部に縦に包丁を入れて1枚にし、凍結液に浸漬した後、両面をドライアイスに接触凍結させ、真空パック保存した後に、ヤリイカ体液の浸透圧付近の濃度の解凍液であり、pHが7.3付近でトレハロースを含み、ナトリウムイオンのモル数1に対してカリウムイオンのモル数が2となる常温の解凍液に浸漬して解凍することで、凍結前の透明なヤリイカを得ることができた。【選択図】図3
