PROBLEM TO BE SOLVED: To provide a method and an apparatus for producing a soybean flour in which, while the unpleasant odor and unpleasant taste peculiar to soybean are improved, an excellent dispersibility and dissolubility are exhibited and a low cost is attained.SOLUTION: In order to achieve this object, a method for producing soybean flour, in which, characterized, a saturated steam of 100°C to 105°C is contacted with a heating part whose surface temperature is 500°C or more to generate a superheated steam of ordinary pressure, and a raw soybean flour is exposed to a superheated steam of 170°C to 350°C for 15 seconds to 60 seconds, is adopted.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2020,JPO&INPIT【課題】大豆特有の不快臭や不快味を改善しながらも、優れた分散溶解性を発揮し、且つ低価格化が図られた大豆粉の製造方法、および大豆粉の製造装置を提供することを目的とする。【解決手段】この目的を達成するため、大豆粉の製造方法であって、100℃~105℃の飽和水蒸気を表面温度が500℃以上の加熱部に接触させて常圧の過熱水蒸気を生成し、170℃~350℃の過熱水蒸気に生大豆粉を15秒~60秒間暴露することを特徴とする大豆粉の製造方法を採用する。【選択図】図1
