PROBLEM TO BE SOLVED: To provide a production method capable of easily and efficiently making the quality improvement including appearance elements such as burnt colors, burnt deposit and fried colors in rices and wheat flour fired product, and a composition used for the method, and the like.SOLUTION: By producing rices and wheat flour fired food product by the addition of glycin and pentose and/or hexose to a rice cooking immersion liquid of rices, the atomization thereof to cooking rice before heating treatment, the addition of the glycin and pentose and/or hexose to a food product raw material butter containing raw material grain flour or raw material grain fraction including wheat flour or the like, the quality improvement of the rices and wheat flour fired food product is performed. The addition liquid is added in such a manner that the quantity of the pentose and/or hexose is regulated so as to be 0.5 to 3.0 time quantity of the glycin, and the quantity of the glycin in the material to be added and 0.06 to 0.4 w/w% of the glycin and 0.08 to 0.5 w/w% of the pentose and/or hexose. The hexose and/or pentose is at least one or more selected from xylose, arabinose, ribose, glucose, galactose and fructose.
