PURPOSE: A cooking method of hand-kneaded noodles having chewy texture is provided to enable users to uniformly cook the noodles through the core. CONSTITUTION: A cooking method of hand-kneaded noodles comprises the following steps: boiling the hand-kneaded noodles inserted into a net body in water boiling inside a pressure pot； steaming the boiled noodles by lifting the net body from the boiling water； settling the noodles for 30 seconds-3 minutes at room temperature for removing the moisture； boiling seasoning stock including seafood or meat, and vegetables； and boiling the hand-kneaded noodles inside the seasoning stock.본 발명은 압력솥에서 망체가 있는 압력솥에서 망체에 수타면을 넣고 끓는 물에서 2kg/cm2이상의 압력과 100∼110℃ 온도로 수타면을 삶는 단계； 상기 압력솥 내에서 망체를 끓는 물 밖으로 상승시켜 상기 삶는 단계와 동일한 압력 및 온도에서 증기로 수타면을 찌는 단계； 해물 또는 육류 및 야채를 넣어 제조된 양념 국물을 끓이는 단계； 및 상기 양념 국물이 끓으면 증기로 찐 수타면을 상기 양념 국물에 넣고 끓이는 단계를 포함하는 수타면 조리방법 및 그에 따라 제조된 수타면에 관한 것으로, 수타면 면발의 탱탱한 질감을 살릴 뿐만 아니라 면에 양념이 잘 배이게 하여 감칠맛을 향상시키고 면의 보존기간을 연장시켜 제조 단가를 낮출 수 있는 수타면 조리방법에 관한 것이다.
