The present invention relates to a method for preparing a natural seasoning, capable of improving the richness and depth of a flavor. The method comprises the following steps: selecting any one or more materials from vegetables and mushrooms, meats, poultry, seaweeds, shellfishes, and fishes； dividing the selected materials into raw materials and materials for steaming； separately washing the raw materials and materials for steaming； if the selected material is a raw material, removing moisture from the selected material and drying in a hot-air drier at 40°；C for 24 hours； placing the dried raw material in a desiccator for 24 hours to induce the moisture balance, and pulverizing the same using a pulverizer； if the selected material is a material for steaming, heat-treating the selected material in a steamer for 15 minutes, and drying the same at 40°；C for 24 hours； placing the dried material for steaming in a desiccator for 24 hours to induce the moisture balance, and pulverizing the same using a pulverizer； and mixing two or more of the pulverized materials for raw stuff or steaming to prepare natural seasoning.본 발명의 천연조미료 제조방법은 채소와 버섯, 육류, 가금류, 해조류, 패류, 생선 중 어느 하나의 소재 또는 2이상의 소재를 선택하는 단계와, 상기에서 선택된 소재를 생것 또는 증자용으로 구분하는 단계와, 상기에서 선택된 생것 또는 증자용 소재 각각을 세척하는 단계와, 상기에서 선택된 소재가 생것인 경우 물기를 제거한 후 열풍건조기에 40℃에서 24시간 건조시키는 단계와, 상기에서 건조된 생것을 데시케이터에 24시간을 두어 수분평형을 유도한 후 분쇄기를 통해 분쇄시키는 단계와, 상기에서 선택된 소재가 증자용인 경우 찜기에서 15분 열처리 후 열풍건조기에서 40℃에서 24시간 건조시키는 단계와, 상기에서 건조된 증자용을 데시케이터에 24시간을 두어 수분평형을 유도한 후 분쇄기를 통해 분쇄시키는 단계와, 상기에서 분쇄된 생것 또는 증자용 소재를 2이상 혼합하여 천연조미료를 제조하는 단계를 포함하는 것이다.
