The present invention relates to a method for producing fish cake. More specifically, provided are fish cake using byproducts which are discarded during red snow crab processing steps, and a production method thereof. According to the present invention, the method for producing the fish cake comprises the following steps: a mixing step (S100) for preparing a mixture consisting of 60-70 wt% of tenderized fish meat, 9-12 wt% of starch, 1-2 wt% of table salt, and 15-25 wt% of a sauce of marinated red snow crab with respect to the total weight a molding step (S200) for molding the mixture and a finishing step (S300) for finishing making the fish cake by cooking the molded mixture.COPYRIGHT KIPO 2017본 발명에 따른 어묵의 제조 방법은 총 중량을 기준으로 60 내지 70 중량%의 연육, 9 내지 12 중량%의 전분, 1 내지 2 중량%의 식염, 및 15 내지 25 중량%의 홍게장물을 포함하는 배합물을 준비하는 배합 단계(S100) 상기 배합물을 성형하는 성형 단계(S200) 상기 성형된 배합물을 조리하여 어묵을 완성하는 완성 단계(S200)를 포함한다.
