This invention relates to a process for the enzymatic polishing of brown rice comprising soaking brown rice in water to obtain soaked rice, subjecting the soaked rice to treatment with calcium carbonate solution followed by enzymatic treatment of the rice grains using a mixture of xylanase and cellulase, washing the enzymatically treated rice and steaming the same obtain the enzymatically polished rice.
