PURPOSE: A method of manufacturing germinated brown rice is provided to increase the total polyphenol content, ABTS radical scavenging activity, DPPH free radical scavenging activity and reducing power. CONSTITUTION: After brown rice is sterilized, the brown rice is germinated by soaking the brown rice at 20-30°;C for 18-30 hours in dark condition. The germinated brown rice is irradiated with a light emitting diode (LED) at 15-20°;C for 5-10 days. LED is one among far-red light, blue light or red light wavelength. The increase of antioxidant activity is the increase of total polyphenol content, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity, α-α-diphenyl-β-picrylhydrazyl (DPPH) free radical scavenging activity or reducing power.본 발명은 발아현미를 LED(light emitting diode)로 조사하여 대조구에 비해 항산화 활성이 증가된 발아현미를 제조하는 방법, 상기 방법으로 제조된 대조구에 비해 항산화 활성이 증가된 발아현미 및 상기 발아현미가 함유된 식품 및 음료를 제공한다.
