The present invention relates to a method for fermenting organic waste at a high speed and recycling organic waste wherein the organic waste, inserted from the outside, is separated into a solid dehydration cake and liquid supernatant in a grinding and dehydrating apparatus, and the separated dehydration cake and liquid supernatant are inserted in a tank, fermented at a high speed, and recycled. More particularly, the solid dehydration cake, inserted into the tank, is processed in a fermentation tank by a solid phase process step, and the liquid supernatant is processed by a liquid phase processing step comprising a pH adjustment tank, a digestion tank, and a settlement tank. Therefore, operation factors (temperature, pH, alkalinity, volatile fatty acid, load of organic materials and so on), which cannot be optimized at medium temperatures by an existing method, can be smoothly adjusted as the organic waste is processed in a high temperature environment. Therefore, a high yield of biogas, high efficiency of processing the organic waste, and a sterilization effect, which are big advantages of high temperature digestion, can be obtained. In addition, electricity and heat needed for system operation can be self-supplied by collecting and storing methane gas with high concentration by using an economical biogas refining apparatus and a gas holder. A system according to the present invention can rapidly move to a site where organic waste to be processed exists by using a truck.
