PROBLEM TO BE SOLVED: To provide a method for producing a high chafuroside-containing tea aqueous solution from a tea extract obtained from tea leaves or tea incrustation, or powder of the tea leaves or the tea incrustation, or from a dried residue of the tea extract.SOLUTION: The method for producing the high chafuroside-containing tea aqueous solution includes (1) a step of adding any of an acid, a base, and a salt or a mixture thereof in any of the process prior to the following heating step, (2) a step of adjusting a pH of the aqueous solution subjected to the following heating step in the step (1) to 5-10.6, (3) step of heat-treating a pH adjusted tea extract aqueous solution obtained after the step (2) at 100-150°C in the process of producing the high chafuroside-containing tea aqueous solution.COPYRIGHT: (C)2012,JPO&INPIT【課題】茶葉又は茶渋、若しくは茶葉又は茶渋の粉末から得られた茶抽出液又は茶抽出乾燥残分から、チャフロサイド類高含有茶水溶液を製造する方法を提供すること。【解決手段】チャフロサイド類高含有茶水溶液を製造する過程において、(1)下記の加熱工程に先立ついずれかの過程で、酸、塩基、塩のいずれか、若しくはそれらの混合物を添加する工程、(2)前記工程(1)において、下記加熱工程に付す水溶液のpHを5~10.6に調整する工程、および(3)前記工程(2)を経て得られるpH調整済茶抽出水溶液を、100~150℃で加熱処理する工程とを含む、チャフロサイド類高含有茶水溶液の製造方法。【選択図】 なし
