PROBLEM TO BE SOLVED: To provide a production method of a non-fermented beer-taste beverage that imparts natural flavor to a beer-taste beverage to improve beer-likeness.SOLUTION: A production method of a non-fermented beer-taste beverage including a step of preparing a carbohydrate solution, a step of adding a sulfur-containing amino compound to the carbohydrate solution, and a step of boiling the sulfur-containing amino compound-added carbohydrate solution, further increases the concentration of the sulfur-containing amino compound in the carbohydrate solution at the time of boiling to produce a larger amount of flavor components contributing to the fermentation feeling of the non-fermented beer-taste beverage, whereby the beer-likeness of the non-fermented beer-taste beverage can be improved. Consequently, the non-fermented beer-taste beverage obtained by the production method has beer-likeness having improved fermentation feeling in spite of not being subjected to a fermentation process.COPYRIGHT: (C)2016,JPO&INPIT
