PROBLEM TO BE SOLVED: To provide a means for calculating a solid concentration of concentrated milk and to stably manufacture concentrated milk by controlling a concentration condition of concentrated milk using the same.SOLUTION: The device for measuring a solid concentration of concentrated milk includes a temperature measuring means to measure a temperature of concentrated milk, a viscosity measuring means to measure viscosity of the concentrated milk, and a solid concentration calculating means to calculate the solid concentration of concentrated milk based on the outputs from the temperature measuring means and the viscosity measuring means, and the method for manufacturing concentrated milk includes the steps of calculating the solid concentration of the concentrated milk by a correlation equation from the measured results of temperature and viscosity of concentrated milk, and manufacturing the concentrated milk by controlling concentration conditions in response to the solid concentration.COPYRIGHT: (C)2012,JPO&INPIT【課題】濃縮乳の固形濃度を算出する手段の提供、及びこれを用いて濃縮乳の濃縮条件を制御し濃縮乳を安定的に製造すること。【解決手段】濃縮乳の温度を測定する温度測定手段、濃縮乳の粘度を測定する粘度測定手段、前記温度測定手段と前記粘度測定手段からの出力に基づいて濃縮乳の固形濃度を算出する手段とを有する濃縮乳固形濃度測定装置、及び濃縮乳の温度と粘度の測定結果から相関式によって濃縮乳の固形濃度を算出し、該固形濃度に応じ濃縮条件を制御して濃縮乳を安定的に製造することができる。【選択図】なし
