PROBLEM TO BE SOLVED: To provide a technology for stably incorporating astaxanthin and resveratrol in a composition.SOLUTION: This composition is obtained by incorporating a melon SOD active extract covered with gliadin together with the astaxanthin and resveratrol in the composition. Also, by incorporating ascorbic acid, citric acid or their salts, above effect is further improved. By using such the stabilized astaxanthin and resveratrol as an antioxidant, or blending them with the beverages, foods or cosmetics, their functionalities are sufficiently exhibited.COPYRIGHT: (C)2013,JPO&INPIT【課題】アスタキサンチンやレスベラトロールを組成物中に安定に含有させる技術を提供する。【解決手段】グリアジンで被覆したメロンSOD活性抽出物をアスタキサンチンやレスベラトロールとともに組成物中に含有せしめる。また、アスコルビン酸、クエン酸、又はそれらの塩を更に含有せしめて、その効果をさらに高める。そのように安定化されたアスタキサンチンやレスベラトロールを、抗酸化剤に用いたり、飲食品や化粧品に配合したりして、それらの機能性を十分に発揮させる。【選択図】 なし
