Le système est composé d’une cuve isotherme, d’une pompe et d’un récipient qui contient une unité terminale enveloppée d’un circuit d’eau glacée. Lors de la traite, le lait passe du lactoduc vers l’unité terminale pour être refroidit grâce au circuit d’eau glacée provenant de la cuve isotherme et enveloppant ladite unité terminale. A la sortie du système, une vanne de lait permet d’acheminer le lait refroidi aux bidons de stockage, et une autre vanne permet d’acheminer l’eau vers la cuve isotherme pour son refroidissement. La circulation de l’eau de refroidissement est assurée par la pompe.
