PROBLEM TO BE SOLVED: To provide a method for producing a composition containing xanthohumol/cyclodextrin inclusion complex which is capable of producing the xanthohumol/cyclodextrin inclusion complex in high efficiency, a composition obtained by the production method, and foods and drinks containing the composition; and further a method for producing a xanthohumol-containing composition by the production method, a composition produced by the method, and foods and drinks containing the composition.SOLUTION: Crushed hop and/or hop extract are mixed with &bgr;-cyclodextrin and/or a &bgr;-cyclodextrin derivative in water and/or a hydrophilic solvent of pH 1.0-8.5 to solubilize xanthohumol in the crushed hop and/or hop extract in the form of an inclusion complex with &bgr;-cyclodextrin and/or a &bgr;-cyclodextrin derivative. The obtained xanthohumol/cyclodextrin inclusion complex is adsorbed with an adsorbent resin and xanthohumol is eluted to obtain the xanthohumol-containing composition having high purity.
