The invention relates to methods and compositions concerning desaturaseenzymes that modulate the number andlocation of double bonds in long chain poly-unsaturated fatty acids (LC-PUFA's). In particular, the invention relates to methodsand compositions for improving omega-3 fatty acid profiles in plant productsand parts using exogenous desaturase enzymes andnucleic acids encoding for such enzymes. In particular embodiments, theexogenous desaturase enzymes utilized are Hemiselmisspp. delta 5 desaturases. Also provided are improved soybean oil compositionshaving EPA derived from plants carrying the genesof interest.
