CONSTITUTION: A producing method of instant puffed and scorched rice comprises the following steps: soaking the rice in water to adjust the water content into 30-40%； heating the rice at 90-120 deg C； layering the heated rice on a heating plate, and heating the rice at 170-180 deg C to adjust the water content of the rice less than 10%； crude-crushing the scorched rice； adjusting the water content of the crushed rice into 17-20%； and molding and puffing the scorched rice for 5-10 seconds.
