SOLUTION: A water-soluble soybean polysaccharide having a median diameter of powder of 60 m or more and a ratio of a fraction having a molecular weight of 3 to 70,000 in a molecular weight distribution by gel filtration HPLC measurement of less than 18% is used as a food such as an emulsifier Solubility is improved more than conventional water-soluble soybean polysaccharide without using additives, further suppresses foaming property upon dissolution and improves foaming property of generated foam.
