A method for storing potatoes, the method comprising the steps of: i. provide a plurality of endodorming or ecodorming potatoes； ii. in a first storage stage, store the potatoes in a first gaseous environment, including the first gaseous environment carbon dioxide in an amount of more than the amount of carbon dioxide present in the atmospheric air up to 5 mol% based on the composition of the first gaseous environment； and iii. in a second subsequent storage stage, store the potatoes in a second gaseous environment, including the second gaseous environment carbon dioxide in an amount of 0.03 to 2 mol% based on the composition of the second gaseous environment, having the first and the second gaseous environments different carbon dioxide contents.Un método para almacenar patatas, comprendiendo el método las etapas de: i. proporcionar una pluralidad de patatas endodormantes o ecodormantes； ii. en una primera etapa de almacenamiento, almacenar las patatas en un primer ambiente gaseoso, incluyendo el primer ambiente gaseoso dióxido de carbono en una cantidad de más de la cantidad de dióxido de carbono presente en el aire atmosférico hasta un 5 % en moles basado en la composición del primer ambiente gaseoso； y iii. en una segunda etapa de almacenamiento posterior, almacenar las patatas en un segundo ambiente gaseoso, incluyendo el segundo ambiente gaseoso dióxido de carbono en una cantidad del 0,03 al 2 % en moles basado en la composición del segundo ambiente gaseoso, teniendo el primer y el segundo ambientes gaseosos diferentes contenidos de dióxido de carbono.
