PROBLEM TO BE SOLVED: To provide a dressing that keeps a sufficiently rich taste even if the amount of oil and fat blended is reduced.SOLUTION: A dressing in emulsified liquid form contains not less than 5 wt.% nor more than 50 wt.% oil and fat. The viscosity of the dressing is from 500-10,000 mPa s, and the average particle size of emulsified particles is from 2-20 &mum. The dressing meets the following formula: 2.50×10×O+1.74×10×V+2.09×10×S=2.5 to 6.5, wherein O (wt.%) is the oil and fat content, V (mPa s) is viscosity, and S (m/kg) is the specific surface area of the oil and fat.
