PROBLEM TO BE SOLVED: To provide a method of treating a material containing animal cardiac muscle protein with enzymes whose reaction control is improved, and the like.SOLUTION: When the material containing the animal cardiac muscle protein is decomposed by the enzymes, the material containing the animal cardiac muscle protein is homogenized and then treated by acting the enzymes stepwise on it in the same reaction tank based on the properties of respective enzymes, in the method of treating the material containing animal cardiac muscle protein with the enzymes.
