The present invention relates to a method for producing a cosmetic composition using olive oil and gelatin, and a cosmetic composition produced thereby. More specifically, disclosed is a method for producing a cosmetic composition using olive oil and gelatin, comprising the following steps: a first step for mixing olive oil, bittern, and purified water at the weight ratio of 50-70 : 25-35 : 5-15, and periodically stirring and aging the mixture so as to produce a base composition； a second step for inserting the base composition into a reactor, and adding gelatin while heating the same, so as to stir and mix the mixture； and a third step for inserting protease into the mixture which had undergone the second step and then stirring and mixing the same thereafter.
