1. Flaky fish product analogue containing from about 18 to 25% protein, from about 3 to 9% fat, and from about 60 to 85% moisture. The flaky fish product analogue of claim 1, wherein the protein is fish protein, soy protein, soy protein concentrate, soy flour, milk protein, whey protein, plasma protein, egg white, wheat protein, pea protein, or combinations thereof. The flaky fish product analogue of claim 1, wherein the protein is fish protein. The flaky fish product analogue of claim 1, wherein the protein is a combination of (1) fish protein, soy protein, soy protein concentrate, soy flour, milk protein, whey protein, plasma protein, egg protein, wheat protein, pea protein, or combinations thereof , and (2) other white or light-colored meat. 5. The flaky fish product analogue of claim 4, wherein the other white or light-colored meat is chicken, turkey, pork, rabbit, or combinations thereof. A flake-like fish product analogue according to claim 4, containing from about 30 to 70% fish protein and from about 70 to 30% other white or light-colored meat. The flaky fish product analogue of claim 1, wherein the fat or oil is animal non-hydrogenated fat, animal non-hydrogenated oil, vegetable non-hydrogenated fat, vegetable non-hydrogenated oil, or combinations thereof. The flaky fish product analogue of claim 1, wherein the fat is monounsaturated fats, polyunsaturated fats, or combinations thereof. The flaky fish product analogue of claim 1, wherein the fat is fish oil. The flaky fish product analogue of claim 1, comprising1.
