PROBLEM TO BE SOLVED: To provide a method for effectively extracting from mushroom, active ingredients activating PPAR&gamma as nuclear receptor and promoting differentiation to a fat cell.

SOLUTION: This method for producing a fat cell differentiation promoting substance includes: (1) a process of adding water of 0.5-50 times mass of a mushroom mass to mushroom, crushing the mushroom to obtain a mushroom crushed product, and heating the mushroom crushed product so as to sterilize, dissolve the mushroom tissue partly, and obtain a mushroom crushed heated product (2) a process of enzyme-treating the mushroom crushed heated product at 40-60°C using cellulase or hemicellulase to obtain a mushroom crushed enzyme-treated product and (3) a process of heating the mushroom crushed enzyme-treated product to 40-121° to executed hot water extract, thereby obtaining a mushroom extract. In either the (1) or (2) process, acid is added so as to bring pH of the mushroom crushed product to 3-6.
