CONSTITUTION: A manufacturing method of swellfish juice comprises the following steps: Prepare and take care of a swellfish; put the swellfish in the water boiled with elm tree roots, radishes, and bean sprouts, and boil at the strong fire, then boil at the middle fire; filter the bones of the swellfish; boil the juice after filtering the bones, and refrigerate. The step of preparing and taking care of the swellfish comprises the following steps: Taking care of the body of the swellfish; taking care of the head of the swellfish; and taking care of the internal organs of the swellfish. The step of taking care of the body of the swellfish comprises the following steps: Cut the neck and head part starting from the belly part by taking the frog bone as the center; Cut the end bone of the lung part aslant, scratch out the remains in the lung by the rear end of a knife; cut the remained bone part at the end of the wing; and wash the cared body with flowing water, wring out the blood. The step of taking care of the head comprises the following steps: Cut the head in half by taking the gill part as the center; remove the valley part by cutting in an inverted triangle shape towards the body part by taking the eye as the center; remove the eye; and performs the same for the other side of the head, wash, and put in water. The step of taking care of the internal organs comprises the following steps: pick out the testis without damaging it, remove the blood by pushing the capillary in the lower part of the testis feebly by the back of a knife, and wash, then put in water; and cut the edge of the gall bladder, wash with flowing water, and tie the edge with a thread not to be contacted with people.
