THE PRESENT INVENTION RELATES TO A METHOD FOR REDUCING ESTER BOUND 3-MONOCHLOROPROPANE-1, 2-DIOL (3-MCPD ESTERS) AND GLYCIDYL ESTERS FORMATION IN FRUIT OILS. IN PARTICULAR, THE PRESENT METHOD REDUCES ACIDITY LEVELS IN THE CRUDE OIL AND REFINING THE CRUDE OIL BY USING MINIMUM LEVELS OF ACID TO RENDER THE REFINED OIL FREE FROM 3-MCPD ESTERS AND GLYCIDYL ESTERS.
