A method of storing potatoes, comprising the steps of: i) using a plurality of potato tubers in a dormant state or in a dormant state of winter dormancy, ii) storing a potato in a first storage step in a first gaseous medium containing carbon dioxide greater than the atmospheric carbon dioxide content air, up to 5 mol. % in terms of the composition of the first gaseous medium, and iii) storage of potatoes in the second subsequent storage stage in the second gaseous medium with a carbon dioxide content of 0.03-2 mol. % in terms of the composition of the second gaseous medium, while the carbon dioxide content in the first and second gaseous media is different. 2. A method according to claim 1, wherein the first gaseous medium is atmospheric air with the addition of carbon dioxide. The method according to claim 1, wherein the first gaseous medium contains carbon dioxide in a concentration of from more than 0.1 to 5 mol. % in terms of the composition of the first gaseous medium. 4. The method according to p. 3, in which the first gaseous medium contains carbon dioxide in a concentration of 0.25-5 mol. %, optionally 0.25-1 mol. % in terms of the composition of the first gaseous medium. 5. A method according to claim 1, wherein the second gaseous medium is atmospheric air or atmospheric air with the addition of carbon dioxide. The method according to p. 1, in which the second gaseous medium contains carbon dioxide in a concentration of 0.03-1.5 mol. % in terms of the composition of the second gaseous medium. 7.
