PROBLEM TO BE SOLVED: To provide a method for applying smoking-processing to roux by a simple method and adjusting the grade of smoking according to a preference.SOLUTION: The method for producing roux-type food obtained by adding water and cooking together the roux containing at least a starch-based ingredient and a seasoning and prepared using edible oil and fat, and optional ingredients, includes placing the roux formed in paste or solid at a normal temperature, on a grill with predetermined mesh opening, applying heating-type smoking treatment to melt the roux, and adding water and cooking together the roux obtained by using a tray to receive the roux dripping from the mesh, and optional ingredients.
