PURPOSE: A manufacutring method of Japanese apricot doinjang (fermented soybean paste) is provided to supplement insufficient nutrition to a conventional doinjang and to improve flavor by controlling bad smell. CONSTITUTION: Japanese apricot syrup is prepared. Soybeans are soaked in water. A dipori (Sardinella zunasi) broth is prepared. The soybeans are added to the dipori broth and boiled. At least one selected from the group consisting of glutinous barley rice, millet, and embryonic brown rice is added to the dipori broth and boiled. The boiled soybeans and the at least one selected from the group consisting of glutinous barley rice, millet, and embryonic brown rice are mixed and crushed. Doinjang (fermented soybean paste), bay salt, soy sauce, and the Japanese apricot syrup are added to the crushed result and mixed to prepare an ingredient for doinjang. Japanese apricot pickled in salt is laid on a bottom surface of a jar, fried salt sprinkled thereon, the ingredient for doinjang is put on the salt sprinkled on the salt-pickled Japanese apricot, bay salt is evenly sprinkled thereon, and then the content in the jar is aged.본 발명은 매실 약된장의 제조방법에 관한 것으로, 더욱 상세하게는 종래 된장에 부족한 영양소를 보충하고, 기존 된장의 문제점으로 지적된 염도를 낮추면서, 이취미를 제어할 수 있는 약된장의 제조방법으로, 매실청을 제조하는 단계； 대두콩을 불리는 단계； 디포리 육수를 제조하는 단계； 상기 디포리 육수에 대두콩을 첨가하고 삶는 단계； 상기 디포리 육수에 찰보리쌀, 좁쌀 및 현미배아로 이루어진 군 중에서 선택된 1종 이상을 첨가하고 삶는 단계； 상기 삶은 대두콩과 상기 찰보리쌀, 삶은 좁쌀 및 현미배아로 이루어진 군 중에서 선택된 1종 이상을 혼합하고 마쇄하는 단계； 상기 마쇄된 대두콩과 찰보리쌀, 좁쌀 및 현미배아로 이루어진 군 중에서 선택된 1종 이상의 마쇄물에 된장, 천일염, 간장 및 매실청을 첨가하고 혼합하여 약된장 재료를 제조하는 단계； 및 항아리 맨 밑에 소금에 절인 매실을 깔고, 볶은 소금을 뿌린 후, 상기 소금을 뿌린 절인 매실 위에 약된장 재료를 담고, 그 위에 천일염을 고루 뿌린 후, 숙성시키는 단계를 포함하는 매실 약된장의 제조방법에 관한 것이다.
