PURPOSE: A manufacturing method of fast-fermented bean paste using Artemisia annua extract is provided to enhance functions of the fast-fermented bean paste and to reduce an unpleasant order of the same.CONSTITUTION: A manufacturing method of fast fermented bean paste using Artemisia annua extract comprises: washing and drying Artemisia annua extracting Artemisia annua by boiling the Artemisia annua at 110-125 deg. C for 4-5 hours selecting and washing beans soaking the beans with an amount corresponding to 4-5 times the amount of the Artemisia annua extract for 20-24 hours by placing the same in a container boiling the beans soaked by using the Artemisia annua at 110-125 deg. C for 4-5 hours removing the boiled beans and cooling the same in a refrigerator at 40-50 deg. C inoculating the boiled and cooled beans with Bacillus subtilis such that fast-fermented bean paste and the Bacillus subtilis has a ratio of 700:3 fermenting the inoculated beans for 24-36 hours in a fermentation room which is maintained at 32-40 deg. C and packing the fast-fermented bean paste powder in 300g, 500g, and 1kg containers.COPYRIGHT KIPO 2013본 발명에서는 청국장의 기능을 향상시키고 개똥쑥의 흡수이용률을 높이고자 청국장 제조시 콩을 개똥쑥 추출물에 불리고, 콩을 삶을 때에도 개똥쑥 추출물에 삶음으로써 청국장의 맛과 영양은 고스란히 보존하면서도 개똥쑥으로부터 발산되는 향에 의하여 청국장 특유의 불쾌한 냄새가 최소화될 수 있도록 함과 동시에 개똥쑥에 함유된 인체에 유용한 영양성분이 청국장에 다량으로 가미될 수 있도록 한 개똥쑥 추출물을 이용한 청국장 및 그 제조방법이 개시된다.본 발명에 따른 개똥쑥 추출물을 이용한 청국장은 콩(大豆)이 담긴 용기에 콩 양의 3~5배에 해당되는 개똥쑥 추출물을 부어 20~24시간 동안 불리고, 이렇게 불린 콩을 110~125℃에서 5-6시간 동안 삶은 후 건져내고, 냉각실에서 40~50℃의 온도로 식힌 다음, 냉각된 삶은 콩에 대하여 발효균인 바실러스 서브틸리스(Bacillus subtilis)균주의 첨가비율이 콩의 중량대비 700:3이 되도록 청국장 발효균을 접종하고 발효균이 접종된 삶은 콩에 대하여 32~40℃로 유지되는 발효실에서 24~36시간 동안 발효시키고, 발효된 청국장을 동결·건조 시킨 후, 동결·건조된 청국장을 분쇄하여 청국장분말을 300g, 500g, 1Kg 단위로 용기에 포장하거나, 청국장분말을 환으로 만들어 300g, 500g, 1Kg 단위로 용기에 포장하거나, 발효된 청국장에 천일염 3%, 마늘 2%, 고춧가루 2%를 혼합하여 으깬 후 300g, 500g, 1Kg 단위로 용기에 포장하는 단계로 이루어지는 개똥쑥 추출물을 이용한 청국장 제조방법이다.
