The invention relates to biotechnology and medicine, and specifically to methods for enzymatic hydrolysis of natural honey, and can be used in agriculture, food industry, pharmaceutics and cosmetics. The technical result of the proposed method is production of a safe and cheaper product and widening of its application area. The method comprises dissolution of honey in purified water in a ratio of 4.8:5.0, respectively, elevation of temperature to 45°C, and conduction of hydrolysis by honey own enzymes. pH of the solution is brought to 6.0, and every 10 min during 50-60 min the pH value is corrected until a stabilized pH value within 4.5-5.0 is achieved. The honey concentrate is cooled to room temperature, stirred, 96% ethyl alcohol in an amount of 2% of the total volume of the honey concentrate produced is added as a stabilizer, the concentrate is stirred and allowed to settle during 60 min.
